Our Star Superfoods

Chickpea flour, the star ingredient in our chocolate chip cookie is made by grinding dried chickpeas (garbanzo beans) into a powder. Garbanzo beans are high in protein (20g/cup) and fiber as well as several minerals and B vitamins; more than 25% of the daily value for iron, over 36% of the daily value for magnesium, 24% of the daily value for zinc, and a whopping 101% of the daily value for folate. Chickpea flour is also an excellent source of thiamine, phosphorus, copper, and manganese.

Plukenetia volubilis, or sacha inchi, the star ingredient in our fruit and seed energy bar, is a perennial plant native to certain parts of South America and the Caribbean. It produces a fruit that’s cultivated for its large, edible seeds and is sometimes referred to as mountain peanut or Inca nut.

The seeds are particularly high in unsaturated fat and contain other important micronutrients, such as phosphorus, potassium, magnesium, calcium, and zinc. What’s more, they contain antioxidants and phenolic compounds that may reduce inflammation in your body and protect against chronic disease.

Sunflower Seed Butter, sometimes called sunflower butter, the star ingredient in all our energy bars, is a creamy spread made from roasted sunflower seed kernels. Sunflower seed butter is a peanut-butter alternative that can usually be used safely by those with a peanut allergy. 

We make our own sunflower seed butter at home (unsalted) ensuring maximum freshness and flavor it with organic cinnamon and pure maple syrup.

Tiger nuts, the star ingredient in our mango crinkle cookies— also known as chufa, yellow nutsedge, or earth almonds — are not actually nuts, but rather edible tubers. Tiger nuts were one of the first plants cultivated in Egypt and traditionally used as both food and medicine.They’re rich in a variety of nutrients and have been linked to several health benefits — ranging from better digestion to a reduced risk of heart disease. The flour itself is naturally sweet which allows us to reduce adding other sugars.  They high fiber content not only helps with keeping full longer but also helps manage blood sugar and cholesterol. 

Tigernut Flour

Red quinoa, the star ingredient in our quinoa  and oats cookie, is a pseudocereal rich in fiber, protein, and many important vitamins and minerals. It's a particularly good source of manganese, copper, phosphorus, and magnesium. Plus it’s an excellent source of protein and naturally gluten-free.

In fact, it’s one of the few plant foods that contain all nine essential amino acids, including lysine, which most grains lack. Thus, red quinoa is considered a complete protein.

These four seed powders, the star ingredients in our chocolate energy bars, constitute a complete protein including the 9 essential amino acids are hard to find in plant-based sources. Our chocolate bars include whole seeds that are powdered making them a nutritional powerhouse! Most packaged foods with a high protein content achieve this by a chemical extraction process that isolates protein from its whole food form. Protein isolates are stripped of almost everything except the protein and are therefore missing the active chemicals, antioxidants, fiber, and other beneficial components of whole foods that impact how our bodies function.

According to the United States Department of Agriculture (USDA), 100 grams (g) of boiled mung beans contain:

  • 7.02 g of protein

  • 19.15 g carbohydrate, including 2 g sugar

  • 7.60 g dietary fiber

Mung beans are also a good source of B vitamins, in particular, vitamin B-9, also known as folate, which helps a person’s body make DNA.
